Low Country Boil


Mike's Low Country Boil

This is good southern dining personified! We were fortunate to have visited a friend on a day when he was cooking this on the patio in a deep fryer pot. It doesn't take long to fix, serves a group of 12 friends nicely and is absolutely delicious. It's all cooked outdoors, then either spread on a table on brown paper or placed into large pans to make it easy to pick what you want as you eat and makes for quick, easy cleanup. Best when eaten fresh and not warmed over.

Low Country Boil


Prepare ingredients as follows or to personal taste:

5 quarts water
1/4 cup Old Bay seasoning
4 pounds small red potatoes, sliced or quartered
2 pounds kielbasa or hot smoked link sausage, cut into 1 1/2-inch pieces
6 ears fresh corn, halved or sliced 1/2 inch slices
4 pounds unpeeled, large fresh shrimp

Cocktail sauce

Bring 5 quarts water and 1/4 cup Old Bay seasoning to a rolling boil in a large covered stockpot.

Add potatoes, return to a boil, cook uncovered for 10 minutes.

Add sausage and corn, return to a boil, cook 10 minutes or until potatoes are tender.

Add shrimp, cook 3 to 4 minutes or until shrimp turn pink. Don't overcook shrimp.

Drain. Serve with cocktail sauce
